Meatloaf is a comfort food, but when you are a vegan you can’t eat it — until now. I came across this recipe a few years back and have made it several times. It is a recipe with a variety of colors and flavors and is so much better for you than traditional meatloaf. This particular recipe is oil free too, making it even more healthy. I have included a picture of the recipe (excuse the stains — its been well used) and a video on how to make it. Bon Appétit!
Sounds and looks good Jen. I have a recipe to share with you it’s called Cashew and Quinoa Loaf. Only 2 teaspoons of oil. I haven’t made it yet but it looks tasty.
Patti…that’s my recipe — the one I mentioned in my video. I must have sent it to you at some point. It is sooooooo good, but a little fattening with all the cashews. I choose to make it when I have a guest coming who is not used to vegan food because it is so delicious and sure to win over any skeptics of vegan food. Have you made it yet?
