Meatloaf is a comfort food, but when you are a vegan you can’t eat it — until now. I came across this recipe a few years back and have made it several times. It is a recipe with a variety of colors and flavors and is so much better for you than traditional meatloaf. This particular recipe is oil free too, making it even more healthy.
