I have been making this dish since the 90s, I think. It is so easy because it is a one dish meal. Mix everything together, pop it in the oven, DONE! It is savory, healthy, and wonderfully delicious. It’s also oil free. For this recipe I added mushrooms which I just happened to have handy. I am so glad I did! Doesn’t everything taste better with mushrooms? I have been vegan for about 2 years, but had never really delved into the world of seitan — a vital wheat gluten product. I decided I wanted to try it and on Christmas I made a BBQ “riblet” using my air fryer. Wow! It was great. Even two non-vegans liked it — BONUS! I have learned that there are many things you can do with seitan. In the video, I show you how to make it using an air fryer. I had never used orzo before this recipe but I like it — its like rice but it has a totally different texture — a bit slippery, I’d say. I love that this dish is vegan, healthy, fat free (I used vegetable broth instead of oil to saute the onions and celery), and a delicious dish when you are in need of a comfort food. The celery adds some crunch, the texture of the orzo is delightfully different, and the kidney beans add the punch to fill you up with some fiber and protein. The recipe is below. I hope you enjoy! NOTE: If you do use oil, I would not recommend canola, as it is usually GMO. Of course, I used veggie broth instead of chicken broth.
There is nothing better than fresh tomatoes out of the garden, especially after eating the hard and tasteless tomatoes you get in the grocery store in the off season. This was the first time I grew tomatoes in a long time and WOW! We ended up with more than we could eat. So…..soup, sauce and this….fresh tomato onion pie. I think I got it out of a magazine long ago. It calls for Caesar salad dressing and mozzarella cheese, but these days you can find a vegan variety in both. Vegans are taking over the world! I got the idea for this dish from a restaurant in Columbus, OH called Portia’s Cafe. I don’t live in the area, so I rarely get to indulge in this deliciousness. On their menu they listed all the stuff in their “Pad Thai” so I used that information to create my own recipe, which I think tastes pretty darn close to theirs. They call their dish Pad Thai but I renamed mine because I think of pad thai being more peanutty — no peanuts in this recipe. This dish is truly extremely good and easy to make. This is a really quick and easy recipe I threw together recently. It is so easy to make and very delicious. Here’s the “recipe.” 1 can chickpeas 1-2 cups cooked quinoa 1-2 avocado Pepper to taste Salt to taste 1 tsp. of chili powder Lemon juice Cumin Garlic to taste Cook quinoa according to package directions. Rinse chickpeas and place in a bowl. Mix salt, pepper, and chili powder to chickpeas and mix together. Saute with nonstick spray for about 10 minutes. Cube avocado and add salt, garlic and cuman to taste. Squeeze on fresh lemon juice and mix together. Add cooked chick peas to avocado. Then add quinoa. Squeeze some lemon juice over the quinoa. Meatloaf is a comfort food, but when you are a vegan you can’t eat it — until now. I came across this recipe a few years back and have made it several times. It is a recipe with a variety of colors and flavors and is so much better for you than traditional meatloaf. This particular recipe is oil free too, making it even more healthy. I love trying out new vegan recipes! I happened upon a jackfruit dish at a local restaurant and decided I had to try it at home. I had never heard of jackfruit before and had no idea what it even looked like. After doing some research, I found some at my local grocery and found a recipe for jackfruit BBQ. I decided to make these red lentil and amaranth patties today because I thought it might be a good thing to take to share with friends tomorrow. Perhaps if they get a taste of how wonderful vegan food can be they will be intrigued to learn more about vegan eating. Sometimes you have to work people through their stomach. You have to prove to them that vegan food is delicious, so that is my purpose for making these today. And I thought, why not do a blog about it. I definitely like sharing recipes. Here is a video that shows how to make a quick sun dried tomato pesto pizza. The moral of this video is READ THE LABELS. My problem is that I don’t take the time to put on my glasses to see the fine print on things I buy at the store. I think, though, that perhaps the best thing to do is purchase things that DO NOT have labels (i.e. whole foods!!). Duh! I learned a lot doing this video.
