During these last few weeks, health has been our major concern. Well, it’s been my major concern ever since I went plant-based — not just for the past few weeks. Food should always be your number one defense when it comes to your health. In today’s climate we need healthy food more than ever. You simply cannot be healthy if you don’t eat the right foods or get the nutrition you need.
This is a very simple 5 ingredient meal I made in about 15 minutes. Even people who don’t like to cook can make this. It is so easy and delicious PLUS it will give your body the nutrients it needs to stay healthy. Just look at the color! Eating the rainbow leads to better health. Stay safe out there!
INGREDIENTS:
10 oz. fresh (preferably organic) spinach, chopped
About 2-3 cups whole grain penne pasta
2-3 tbsp. veggie broth
6-8 cloves garlic — I used the kind already in a jar and I just spooned in as much as I wanted
1 can diced tomatoes OR 2 medium tomatoes chopped and seeded
1 can chick peas
Vegan cheese (optional)
PROCEDURE:

Saute the garlic in the veggie broth — about 1-2 minutes

Add the tomatoes and saute until bubbly

Add the chopped spinach. Put the lid on so that the spinach can steam and wilt. Stir frequently.

Add the cooked pasta. Toss to coat

Top with “cheese” and serve with bread if desired.

Always salt the pasta water with ROCK SALT!
Once you drain the PENNE pasta put back in POT it cooked in and add either OLIVE OIL or BUTTER this depends on the sauce!
Stir to coat pasta!
NEVER EAT BREAD with PASTA!THAT IS AN ITALIAN NO NO!
Bread is a filler…….you ONLY Serve bread if there is NOT ENOUGH FOOD FOR ALL AT THE TABLE.The theory behind that is you are filling up on bread instead of the PASTA MEAL……I hope you will try and compare!

Thanks for the info on Italian cooking. I never thought about using rock salt for the pasta water. I will have to try that! I am doing my best to avoid oils — all oils — so that is why there was no oil in this dish. It’s not easy, but very doable with this dish. I wish I didn’t like bread so much, but I do and have just always used it to soak up the sauce from a pasta dish. That’s just me, I guess. I appreciate you watching!!
