I happened to grow an awesome eggplant in my garden this year (with many more on the way). Truth be told, eggplant is NOT my favorite vegetable, but in my effort to expand my horizons, I decided to plant one plant and try some new recipes. Here is one of them. I had actually tried this recipe before, but decided I wanted to try it again and share it with others in an effort to help people craving a BLT but not wanting to eat bacon.
I ended up trying this 2 different ways: baked and fried. Overall I think I prefer the fried version. Unfortunately, if you are looking for a replacement as crispy as real bacon, this won’t do the trick for you. But the taste is good and it’s relatively easy to make. So, if you are craving a BLT but are choosing not to eat meat (kudos to you and the pigs thank you!!), this is definitely an excellent substitute.
Click HERE for a link to the recipe I used. In the video I explain that I first tried baking the eggplant, but it did not get crispy enough for me. Thinking I was being smart, I decided to put it under the broiler and ended up burning a lot of it. Thankfully, I was able to salvage enough for my sandwich. If you decide to do this, just monitor closely so you don’t burn the eggplant like I did. The next day, I decided to fry it (using as little oil as possible). It worked pretty well, but I wished my slices had been a little bit thicker because it tended to fall apart when I flipped it because it was so thin. I probably need to keep playing around with this and with 3 more eggplants on the way, I probably will. This recipe is definitely worth a taste.
