The garden is not as plentiful this year as last year, but we did manage to get some green beans and I even canned 11 pints. All these green beans made me hungry for a green bean casserole. During the lockdown I stumbled upon Tik Toc and have learned so much. There are many recipes on this social media platform. I found this one and decided to try it. It is so easy and delicious and I simply reduced the oil to keep it more healthy. COVID — If I never hear that word again I would bend down and kiss the ground and thank the universe. COVID, and primarily our reaction to it, has caused untold stresses for millions of people in this country. People have lost jobs, businesses, and livelihoods due to the shut downs and social distancing measures. Let me state for the record that I am not afraid of the virus. Lettuce have a tostada!
I have so much lettuce in my garden it’s hard to eat it all. I have had salads for many days now and decided I wanted something different. My friend showed me how to make these tostadas a few years back and I always make them when lettuce is plentiful. Tostadas are quick, easy, and cheap. Especially if you have lettuce growing in your garden. Actually, you don’t need a garden to grow some lettuce — all you need is a pot, soil, and seeds. Cauliflower Curry
I saw this recipe on Instagram and with a few of my own tweaks (no oil, less coconut milk, shallot instead of an onion) it turned out pretty good! Curry is a taste that you either love or hate. I happen to love curry. You can simply reduce the amount of curry you add if you don’t want as much. The cauliflower makes this dish super healthy because cruciferous veggies are the bomb! Wheatberry Salad
I mentioned at one point that I wanted to find a wheatberry salad recipe after really liking the wheatberry sloppy joe recipe I made last fall. CLICK HERE if you missed that recipe. I found THIS SALAD RECIPE and it was was very good. It is definitely a different salad with the roasted veggies and wheatberries which added unique textures and flavors. I have never been much of a gardener even though my parents had a pretty big garden when I was growing up. I truly regret not learning from their expertise. At this point, I’m sure many of you are as stressed out as I have been about this pandemic we are currently facing. Stress causes people to eat things they really shouldn’t and I am no exception. Wheat Berry Sloppy Joes
Have you ever heard of wheat berries? I hadn’t until recently. These tasty little nuggets are what wheat products are made from. Sorry to those who are gluten intolerant — these aren’t for you. Wheat berries contain all the healthy stuff that is often stripped away when making wheat products. As far as nutrition goes, they are packed full of protein, iron, magnesium, vitamin E, and fiber. In addition, they are low in calories and very filling. While I chose to make sloppy joes, you can use wheat berries as you would any other grain and can stand in as a substitute from time to time. I know that bread is an evil food these days with everyone counting their carbs, but this is one food I could never give up. The more I learn about carbs the more I realize they are not the problem if you eat the right ones. Of course, there are bad carbs, but many are good ones too. Speciesism. I have come to understand this term very well in the last year or so. Have you ever heard of it? It is really pretty simple: it’s prejudice or discrimination based on species. And it is everywhere in this world just like other -isms you know. It just took me 50 some years to figure it out. I have always loved animals. As a kid I remember seeing a picture of a raccoon caught in a trap who died as it struggled to free itself. This picture is still seared in my mind. Yes, you heard me right…..I want to talk about poop. Now, I know this is a rather embarrassing and uncomfortable topic, but it’s important to talk about this because what you excrete from your body is just as important as what you put into your body. Your poop can tell you a lot about your health. I will be brutally honest here. Because I eat a plant based diet, I eat a lot of fiber. Fiber makes you poop — in fact fiber is essential if you want to poop regularly (and who doesn’t?) So, I poop as much as 3-4 times a day — regular sized poops. I can’t imagine my day without that. My Skin Cancer Experience
I consider myself a pretty healthy person — I do my best to eat right and exercise. My body is my temple and I try to treat it that way. So I was surprised when I got a phone call from my dermatologist telling me I had skin cancer. As far as I know, there is not much I could have done to keep from getting skin cancer other than stay out of the sun or protect my skin with sunscreen, so, having a healthy lifestyle, really didn’t help me in this case.
