My life has taken many paths and they are all paths of purpose. While things have happened in my life that have been tragic, I have tried to see them as learning experiences. There was a reason why I met my husband who left this Earth much too soon. He brought me laughter and music and dancing that I would have never experienced otherwise. And, of course, he brought me true love. After his passing, I spent many years trying to figure out what my next path would be. I stumbled around a lot, but eventually found energy work, mainly though Reiki. This has really helped with my healing and sadness. Reiki then led me to learning more about energy work (there is so much to learn). This is my current path and I plan to stay on it for awhile. Black Bean Enchiladas
Ahhhh….the 90s were a fond time for me. I was young and married to the love of my life. Living the good life. This recipe takes me back to that time. My friend, Vanassa, was an awesome cook and she made these enchiladas for us on occasion. They are yummy, filling, and pretty healthy. I only had to change the cheese to make it plant based and removing the oil was easy too. Enjoy! VANASSA’S BLACK BEAN ENCHILADAS Black Bean Sauce: 1 onion, chopped 4 cloves garlic 2 cans black beans 1 tbsp. salt 2 tbsp. cilantro 1 tbsp. cumin 1 tbsp. chili powder Enchiladas: 1-2 cups tomato sauce (part of saute shells and part to cover before baking) salt, cumin, chili powder to taste 8-10 tortillas (I used flour, but corn would work too) 12 oz. grated vegan cheese 1/2-3/4 c. onion 1. A most unusual salad
This quinoa salad is healthy and contains a rather unusual variety of flavors and textures. When you combine things like curry, jalepeno, dill, sweet grapes and radishes you get a salad like you’ve never had before. I really loved this salad from the first time I took a bite. Even if it sounds a bit weird, try it anyway. I don’t think you will be disappointed. NOTE: I have on occasion substituted shaved Brussel sprouts for the radishes. It is just as tasty.
