I would have to say that I have always been a nonconformist. I just never quite fit in with any particular group or place and I never considered myself “mainstream.” I often say I was born under the wrong moon. I was born around 11:30 pm and wonder if my life would have been different if I had been born 30 minutes later — on a different day. I love numerology. I am a 3 life path — the great communicator. I don’t feel I fit that label because I am a pretty introverted person and often choose solitude over being in a group. Maybe that’s why I enjoy my blog. I can’t support Breast Cancer Awareness Month
What? Did she actually say that? I know, I probably made some people angry already, but here are the reasons why I can’t support breast cancer awareness month: First, I am well aware of breast cancer and I really don’t need to be reminded of it. Can we at least agree on that? There are way too many women getting breast cancer, but I believe a lot more could have been prevented if they had the right information which I will share below. Second, I am all about PREVENTION. Yes, let’s focus our efforts on NEVER GETTING BREAST CANCER IN THE FIRST PLACE. Is that unreasonable? I commend the survivors of breast cancer — I know they went through a lot to get through to be a survivor, but wouldn’t it have been easier to never get it? Don’t make yourself the victim here. Italian Eggplant
This recipe is so yummy and I am not even a huge fan of eggplant. However, I quickly am becoming one. I thought this was the last eggplant from my garden, but I ended up harvesting one more. Lucky me! The video has some pounding in the background from some renovations going on in the house. (sorry — try to ignore if you can). Coconut cabbage and rice
I learned to make this dish from a local food store I used to work in. This dish is so simple, tasty, and of course, plant based. It is a bit of a comfort food, very filling, and satisfying. When you can, try to use reduced fat coconut milk. Other than that, it’s oil free. The recipe is below the video. If you try this, please comment. Thanks! 1/2 cabbage 1 can coconut milk 1 can tomatoes (or 2 cups fresh chopped tomatoes) Rice Slice cabbage thinly and saute with ¼ of the coconut fat and ¼ cup of the coconut milk. Cook, covered, until tender. Add tomatoes and salt to taste. Cook 1-2 cups rice with the rest of the coconut water and fat. Add salt to taste.
