My mom makes the best tomato soup. She’s been making it since 1984 and I finally had her show me how she makes it. It is sooooooo easy! I’m very proud that the tomatoes I grew in my garden have turned into future sustenance. We decided to add basil and I forgot to show that in the video. All we did was finely chop fresh basil — about 20 leaves for the batch. Can you go wrong with tomato and basil? I think not! Here is my mom’s hand-written recipe.

Mom’s Canning Lesson 1: Green Beans
When I was a little kid I remember my mom doing all sorts of canning in the kitchen. My dad grew a large garden so there was always plenty of vegetables to can. Green beans were one thing we always had plenty of and, after I left home, I often got several jars of these to take back with me to enjoy. Now that I have my own garden (although these beans were not from my garden — the beans just didn’t do very well, sadly) I wanted to learn the process of canning. Now I have learned how to can the beans (and have it forever preserved on my blog for future reference) I plan to do more canning in the future. Edamame Spread
Just a super quick post today. This is a spread or dip using edamame, which is a soy product. Be careful to buy non-GMO edamame because most soy is GMO these days. I also want to mention that, as a vegan, soy is an option for me as a meat substitute, but I don’t like to eat a lot of it. Soy contains estrogen which is not always the healthiest option. So, just be aware of how much soy you use. It is not something you want to eat every day. This can be put on bread, toast, on crackers, or in a wrap. Click HERE to go to the recipe I used. From BLT to ELT (Eggplant “bacon”)
I happened to grow an awesome eggplant in my garden this year (with many more on the way). Truth be told, eggplant is NOT my favorite vegetable, but in my effort to expand my horizons, I decided to plant one plant and try some new recipes. Here is one of them. I had actually tried this recipe before, but decided I wanted to try it again and share it with others in an effort to help people craving a BLT but not wanting to eat bacon. I ended up trying this 2 different ways: baked and fried. Overall I think I prefer the fried version.
